As powerful swimmers of the open ocean, yellowtail kingfish and their close relatives are at home in all warm oceans.

Known for a long time in Latin America as cevice, as well as in Japan in the form of sushi, the yellowtail kingfish is also becoming very popular here. Until now, however, it was considered an exclusive rarity due to its non-European distribution and low catch numbers - especially as non-frozen fresh fish.

Now we have succeeded in raising this fantastic fish in our saltwater pools with the best water quality in this country as well, thus supplying it in a previously unknown freshness and quality.

All of this is done in a sustainable way that protects the world's oceans and wildlife, uses our resources responsibly and at the same time meets the needs of the animals with optimal conditions all year round.

In this way, our Kingfish makes an important contribution to sustainable, healthy nutrition and helps to protect its increasingly endangered wild relatives. Of course, the ASC sustainability certification is not missing here either.

Greater AmberjackSeriola dumerili

Also closely related to the yellowtail kingfish and found in all the world's oceans, including the Mediterranean, is the greater amberjack.

With a length of up to 2 m, this strong, beautifully coloured warm-water fish is one of the most popular, but also most sought-after sea fish. Unlike its smaller congener, it enjoys a much higher profile in Mediterranean cuisine due to its natural distribution in the southern part of the Mediterranean, for example as ricciola in Italy, sériole in France or pez limón in Spain, where it has been an integral part of the menu in good restaurants for many decades.

The firm yet tender meat with a mineral, unobtrusive flavour is ideal for various preparation methods and also cuts a good figure on the grill thanks to its robustness.

Due to its impressive size and fast growth rate, it is also ideal for aquaculture and - thanks to our know-how - can also be kept and cultivated under optimal conditions all year round, so that we can offer you a top culinary product with a clear conscience.
